The heat continues to make my life unbearable. I'm so ready for fall.
Not that here in Puerto Rico we see a huge difference from one season to another. But we get about a ten degree drop during fall and winter. Which is a lot if you ask me. At least for those of us who live in the tropics.
Frozen treats and cold drinks make my daily tasks more enjoyable.
I got the idea for this drink from another blogger. Summer is 'berry season' after all. Enjoying berries in all its forms is what summer is all about.
*Tip: I always have Lemon Ice Cubes in the fridge ready for adding to fruity drinks. Just mix 1 part lemon juice with 3 parts water, pour into ice cubes and freeze. They won't water down your drink.
- 1 cup frozen (or fresh) Blueberries
- 3 Lemons
- 3/4 cup Sugar
- 3 1/2 cups of Water
-Cut each lemon into three pieces. Put them in a sauce pan with the rest of the ingredients. No need to juice or seed the lemons, put them whole in the sauce pan.
-Bring everything to a boil. Then simmer over medium heat for 15 minutes. The water should have reduced by a half cup already, leaving you with a 3 cup concentrated syrup.
-Strain the mixture and let it cool. Add more water to taste, after it has cooled down in the fridge. Garnish with frozen berries and lemon ice cubes.
