Today's Lunch: Pizza Caprese

Crispy Crust!

Pizza is one of my favorite foods. Even if it's bad, it's good! I didn't want to eat pizza today, but I had a bowl of canned tomatoes sitting in the fridge and some leftover homemade mozzarella that needed to be used before it went bad. Also, my mom gave me a Basil plant as a christmas present that I was dying to use.

This is a very simple pizza recipe, with nothing special going on except for the homemade mozzarella and the fresh basil. The dough came out of a bag. I love those small pizza dough baggies they sell at the store, that you just mix with a little water and it's ready to use. It's the perfect serving for just two people and I don't have to measure anything. Comes out perfect every time!

It ended up being absolutely delicious.

1 bag of pre-made pizza dough from the store
1/2 cup canned tomatoes
1 cup Mozzarella Cheese
4 Fresh Basil Leaves
Olive Oil
Salt and Pepper
1 Garlic Clove

-Prepare the dough according to package instructions.
-After it rises, put it in the pizza pan and sprinkle the chopped garlic on top with some salt, pepper and oil. Bake for 5 minutes.
-Add some of the grated cheese. Then add the tomatoes. Sprinkle on top the chopped basil. Add the rest of the cheese.
-Bake for 15 minutes until the cheese has melted.
